Soups On!

This is the time of the year I start digging into soup.  There’s a whole world of soup out there waiting to be eaten, and I’m not talking about the canned kind. I will admit to enjoying canned soups, but the amount of sodium in them is crazy! I don’t want to be putting all that sodium in me. So I make my own.

Have you ever made your own soup? It’s very, very easy. This year I devoted one afternoon to making tomato soup and potato soup. It took me a little over two hours to make them from scratch, and now I have a pile of delicious frozen soup that is going to last all winter long. Quick disclaimer: The tomato soup link is to a recipe I did not make. The recipe I made I got in a book through inkling called The Professional Chef. I didn’t buy that book. the tomato soup recipe was in it as part of the free preview. It’s a bit more complicated than the one I linked to, but the one I linked to looks like a decent recipe. The potato soup link is what I made, and it is mega-yummy.

If you’re trying to work in more vegetarian meals, making and freezing soup is an easy way to get it accomplished for the winter. When you have a long, busy day you can just come home to your already prepared, yummy soup. It really doesn’t get any easier. Plus, now you have a reason to own an immersion blender if you didn’t already. Immersion blenders are FUN!

I’d like to make more soups, but Mark has informed me we have enough soup and pasta sauce (made from when the roma tomatoes took over our backyard) to eat either soup or pasta once a week for the next five months. He has asked me to kindly refrain from making more soup. I don’t know if I can do that……
